Having brothers was also something very new to me; I have three sisters and my husband has three brothers. I have had so much fun getting to know each one of them; they are very creative and fun, everything that looks dangerous is very interesting to them and they are never afraid to try anything.
One of them has gone through very hard times this last couple of years, one thing after another.The last time which was two months ago he had a bloodstream infection that almost killed him.That weekend he was going to get baptized and because of the infection he wasn't able to do it. He had to wait until he was completely healed to finally get baptized this last Sunday. I am so happy for him, he has been a really big encouragement in my life, after everything that has been going bad in his life he is not discouraged. I have never heard him complain to God but wanting to do his will and follow him more than ever.
That same day two other girls got baptist too, so all their families decided to get together for a meal after the Sunday service; we all brought something to share; I made a chocolate chip cheescake and a no-bake mocha cheesecake that I would like to share with you.
CHOCOLATE CHIP CHEESECAKE
(i found this recipe in a "taste of home" magazine)
ingredients:
2 cups chocolate wafer crumbs ( i used "oreos")
6 Tbsp butter, melted
3 pkg. (8 ounces ea.) cream cheese, softened
1 cup sugar
1 tsp. vanilla extract
3 eggs, lightly beaten
1 cup miniature chocolate chips(semi-sweet)
In a bowl, combine wafer crumbs and butter.Press onto the bottom of a greased 9-in. springform pan (i used a 9x13" pan).Chill for 15 min. or until set. In a large mixing bowl, beat cream cheese, sugar and vanilla until smooth.Add eggs; beat on low speed just until combined.Stir in chocolate chips.Pour into crust.
Place pan on a baking sheet.Bake at 325 degrees for 55 to 60 minutes or until center is almost set.Cool on a wire rack for 10 minutes.Carefully run a knife around edge of pan to loosen;cool 1 hour longer.Refrigerate overnight.
NO-BAKE MOCHA CHEESECAKE

ingredients:
crust: 2 cups crushed oreos, reserve some for topping
1/4 cup butter,melted
Combine and press into a 9-in. springform pan.
Filling: 8 oz. pkg cream cheese, softened
1 cup whipping cream, whipped
1 can sweetened condensed milk
1 Tbsp. hot water
2 Tbsp. instant coffee
2/3 cup chocolate syrup
Beat cream cheese til smooth. Fold in whipped cream.Add sweetened condensed milk.Dissolve coffee in hot water, and add to chocolate syrup.Stir mocha mixture into cream cheese mixture.Spread over oreo crust.Top with reserved crumbs and FREEZE!!...
